J. Carver Distillery recently unleashed a “barrel-rested” gin (less time than “barrel-aged”) and the oak-kissed spirit thankfully retains its botanical brightness. “The delicacy of the gin is what we don’t want to lose by leaving it in too long,” said distiller Matt Miller.
Founded in 2013, J. Carver Distillery is focused on producing unique, hand-crafted spirits one batch at a time. In collaboration with Minnesota’s agricultural community, their spirits are formulated using locally-sourced ingredients, such as winter wheat, resulting in the highest quality craft spirits.
One of the biggest questions I've been getting from my readers and friends over the past 4 months is "What do you know about the new distillery they are building in Waconia?" Since I live within walking distance from the site and am usually on top of this type of thing, I decided that I should look into this mysterious project more closely! Founder and partner Bill Miller and Gina Holman, founding partner and manager were kind enough to invite me out to the J. Carver Distillery for a tour and interview.
An innovative approach to fundraising being spearheaded by Bill Miller of the J. Carver Distillery in Waconia could help give the Waconia Baseball Association grandstand project at Lions Field the financial push it needs to get off the ground yet this fall — and help other community efforts in the future.
